Through EatWell Exchange, Liberty City-native Ashley Carter, RD LDN has become the hero that her community and her own parents needed. With no dieticians or nutritionists present to share knowledge of healthy eating with her household, both of Carter’s parents developed diabetes while she was a child. The disease ultimately took her mother’s life when Carter was just a teen.
Today, she teaches residents of all ages in Miami-Dade's food deserts how to eat healthy while still enjoying heritage recipes and signature dishes. EatWell Exchange’s Give Miami Day fundraising supports the purchase of food and supplies for cooking classes so that supplies like knives and cutting boards don’t have to be shared between students.
“These kids don’t have a lot of their own,” said Carter of the youngest community members she serves. “Having their own supplies lets them know that they’re being thought of.”
Through Give Miami Day funds, EatWell Exchange was also able to switch from volunteer-led programming to paying instructors for their time, a move that Carter said affords the nonprofit greater sustainability.
The organization’s ultimate Give Miami Day fundraising goal is to raise enough money to start a teaching kitchen. “Once we get up and running, we’ll be able to maintain it,” said Carter. Currently, most of the organization’s programming is held in partnership with other organizations and not open to the public at-large to attend. A teaching kitchen would allow EatWell Exchange to open its doors – literally and figuratively – to a wider audience.
